Preparation

  1. Halve and stone the apricots.
  2. Slice the apricots and dice the sérac cheese, arrange them on a plate and drizzle with lemon juice.
  3. Pour the vinegar into a small bowl, season with salt and pepper, add oil.
  4. Season the apricots and garnish with a little rosemary for extra flavour.
